Il presidente Aia (Associazione italiana allevatori) Pietro Salcuni punta a rendere obbligatoria l’iscrizione al sistema Aia da parte dei Consorzi Dop e Igp. «L’obiettivo – spiega – è quello di fotografare l’esatta quantità di latte destinata alla produzione di un formaggio a marchio Ue e, dunque, evitare che siano commercializzate forme realizzate con materia prima di origine sconosciuta o, comunque, al di fuori dell’area delimitata dai singoli disciplinari».
La tecnologia già esiste: oggi i controlli «funzionali» eseguiti dall’Aia interessano il 78,4% del latte commercializzato prodotto da 18.644 aziende, ossia il 52,5% degli allevamenti che hanno conferito latte nel periodo 2012/2013. Le garanzie del sistema Aia, secondo Salcuni, porterebbero vantaggi «ai grandi consorzi come il Grana Padano oppure a quelli talvolta finiti al centro delle polemiche come la Mozzarella bufala campana Dop» che pure recentemente ha adottato un sistema di tracciabilità volontario dalla «stalla alla tavola».
Roberto Moncalvo, presidente della Coldiretti, sottoscrive la proposta a garanzia dei consumatori e rilancia: «Non è una speculazione agricola ma una gestione lungimirante del mercato». Produrre le quantità «esatte» di formaggi o carni del paniere tipico, infatti, avrebbe l’effetto immediato di calmierare la produzione e, dunque, valorizzare il made in Italy (e con esso la materia prima di qualità) in termini di prezzo. «La difesa del made in Italy – ha concluso Moncalvo – è la madre di tutte le battaglie. Ma occorre spostare il problema a livello europeo dove continuano ad essere tollerate pratiche sleali di macellazione e dove bisogna fermare tutte le ipotesi di apertura delle frontiere alle carni agli ormoni statunitensi».
